Here I will be sharing some of my food for thought and favourites from my vast cookbook collection (I have a bit of a weak spot for them) and websites that I use. Many will be gluten free, dairy free and Very low fat, but are still wrapped in a healthy, easy and tasty package that the whole family will enjoy!

So don't be afraid to experiment a little bit...the kids will be fine if they don't eat the chicken for one meal, and maybe you'll be surprised and they'll LOVE it...you'll never know if you don't go there.

OH Really

    In 2008 I was diagnosed with celiac disease, followed by lactose intolerance, and then my gall bladder decided that it was going to jump ship.  That ended any fatty food consumption.  At the time it seemed that I just drove into a massive pothole on my quest for rediscovery, but as any challenge can, it has helped create a healthier, stronger, more conscious, Me. 
    Even with my restrictions, food has become much more enjoyable, to create and to eat.  The process is more like a celebration, of flavours, world adventure, and of healthy choices.  I don't believe in diets.  I actually really dislike the word for so many reasons.  I believe in a lifestyle choice.  This conscious decision is what will have sustaining impact and results through the rest of our lives.
